Recipe: Greek Walnut Cake

Christmas is just around the corner and it will soon be time to start baking. The majority of the population will be baking the same things they baked last year and the year before, and the year before that. But you, you are not going to do that. You are going to wow your family and friends because you will make them my Greek Walnut Cake. Am I right? Of course I am right. 

My Greek Walnut Cake is absolutely delicious. Just look at the photos below. It's also healthy and gluten-free, and probably one of the easiest cakes to make. Anyone interested in the recipe? If so, just scroll down ;)

 

Ingredients for the cake:

  • 1 1/2 cups of oats
  • 2/3 cup of chopped walnuts
  • 1/3 cup of fine powder of walnuts (use a food processor)
  • 1/2 cup of brown sugar
  • 1 TBS of baking powder
  • A pinch of cinnamon & nutmeg
  • 3 egg whites
  • 2 yolks
  • 1 1/4 cups of plain Greek yogurt

Ingredients for the sauce:

  • Plain Greek yogurt
  • Honey
  • Melted dark chocolate

Preparation:

  • Mix dry ingredients and set aside
  • Beat your egg whites into snow and add to the rest of the wet ingredients
  • Mix the dry and wet ingredients, but don't overmix
  • Pour the batter into a greased and floured cake pan
  • Bake at 360 degrees Fahrenheit for 35 minutes (or until the fork comes out clean)
  • While the cake is baking, blend the ingredients of the sauce (yogurt+honey)
  • Spread the sauce on the cooled cake and drizzle melted dark chocolate over it
  • Refrigerate for 30 minutes
