Recipe: Easy Carrot & Chickpea Fritters

If you're someone who's childless and has amazing organizational skills, like me, then you probably have a lot of time on your hands. I know I do. I don't think I've ever had so much time free time. It's great though because I finally get to do things I wouldn't otherwise have much time for. 

Everyday, besides intensively looking for a job, I try to create some kind of content for either my blog or my Instagram page (@candied_chocolate). These past few days, I've been spending a lot of time in the kitchen trying to come up with easy and healthy recipes. I figured that so many people are struggling with healthy eating, so why not help them out? Why not create quick meals that are not only nutritious, but also delicious?

Today, I'm presenting you with my Easy Carrot & Chickpea Fritters. They are absolutely fantastic, and I'm not saying that just because I came up with them. They're healthy. They're gluten-free. They're vegetarian. And they're tasty. Just look at the colours? Aren't they beautiful? 

Here's how to make fritters:

Ingredients:

  • 1 can of chickpeas
  • 1 cup of oats
  • 2 eggs
  • 2 carrots
  • 4 TBS of ricotta cheese
  • 1 small onion
  • salt & pepper

Preparation:

  • Mix all the ingredients in a blender
  • Heat olive oil on a non-stick pan over medium-high heat (If you have a good pan you're not going to need a lot of oil)
  • Form fritters and fry until golden on both sides
  • Serve with more ricotta cheese and drizzle with a few drops of sriracha
