Caramelized Banana Protein Waffle

Would you believe me that today was my first time ever having a caramelized banana? Well, it's true. And to be honest, I don't know what I've been doing for the last 30 years. A caramelized banana is probably one of the best things on this planet and I don't think I'm exaggerating.  

So today I made a vanilla protein waffle and I topped it with Cool Whey vanilla ice cream and a caramelized banana, and I drizzled it with my favorite maple walnut syrup from Walder Farms. Do yourself a favor and recreate this recipe. And don't forget to tag me!

Ingredients for the waffle:

Ingredients for the caramelized banana:

  • 1 banana

  • 1 TBS of coconut oil

  • 1 TBS of maple syrup (I use Walden Farms maple walnut syrup)

Preparation of the waffle:

  • Mix dry and wet ingredients separately

  • Mix the wet ones into the dry ones

  • Let the batter stand for a couple of minutes

  • Pour the batter into a greased waffle maker and cook until golden

Preparation of the caramelized banana:

  • Cut the banana in half lengthwise

  • Heat coconut oil on a skillet

  • Add maple syrup

  • When bubbly, add the banana

  • Cook the banana slices until caramelized and soft
