Easy Protein Pancakes

Ever since I started posting my pancake creations on my Instagram stories, I’ve been getting quite a lot of messages from people asking for the recipe. And you know what? I love it! I’m so humbled every time someone wants to try my food. I’m humbled because I’m no food blogger, at least not your typical food blogger. I just love cooking and baking and just experimenting.

My protein pancakes are extremely easy to make and don’t require a lot of ingredients. One thing that is extremely important though is that you use a protein powder that bakes well otherwise your pancakes will turn out dry. Ingredients:

  • 1 scoop of MyProtein protein powder

  • 1 TBS of whole wheat flour

  • 1 TSP of baking powder

  • 1 egg

  • 3 TBS of ricotta cheese

  • A splash of unsweetened almond milk (the thicker the batter the thicker the pancakes)

Preparation:

  • Mix dry and wet ingredients separately

  • Add wet ingredients to dry ingredients until combined and set aside for a couple of minutes

  • Preheat your pan over medium heat and add a little bit of coconut oil

  • Scoop the batter onto the pan

  • Fry until bubbles start to form and then flip and cook the other side

  • Top with whatever your heart desires
