Ever since I started posting my pancake creations on my Instagram stories, I’ve been getting quite a lot of messages from people asking for the recipe. And you know what? I love it! I’m so humbled every time someone wants to try my food. I’m humbled because I’m no food blogger, at least not your typical food blogger. I just love cooking and baking and just experimenting.
My protein pancakes are extremely easy to make and don’t require a lot of ingredients. One thing that is extremely important though is that you use a protein powder that bakes well otherwise your pancakes will turn out dry. 1 scoop of MyProtein protein powder
1 TBS of whole wheat flour
1 TSP of baking powder
3 TBS of ricotta cheese
A splash of unsweetened almond milk (the thicker the batter the thicker the pancakes)
Mix dry and wet ingredients separately
Add wet ingredients to dry ingredients until combined and set aside for a couple of minutes
Preheat your pan over medium heat and add a little bit of coconut oil
Scoop the batter onto the pan
Fry until bubbles start to form and then flip and cook the other side
Top with whatever your heart desires
