Delicious Carrot Fries

Ever since becoming a mom, I feel like I’m constantly hungry. I mean it’s not really surprising since I spend my days breastfeeding (making milk and breastfeeding is hard work and burns lots of calories) and running around Luna. What’s surprising to me is that I’m suddenly craving junk food. Yes me, the person who’s always been known for working out and fuelling her body with nutrient-dense food. Weird, right? Oh well… I guess it’s true when they say motherhood changes you.

The good thing about food, however, is that you can turn any junk food into healthier and delicious treats. I, for instance, am obsessed with sweet potato fries. If I could eat them with every meal, I would, but then I would be left with an additional 10 pounds. And we don’t want that, now do we? So, I had to find an alternative. And I did - CARROTS. Yes, carrots. And they taste exactly like sweet potatoes, I swear.

Here’s how to make these delicious carrot fries:


  • 3 large carrots

  • 1 TBS of olive oil

  • 1/2 TSP of smoked paprika

  • 2 pressed garlic cloves

  • Salt

  • Pepper


  • Preheat oven to 400 degrees F

  • Cut the carrots into fries, place them in a mixing bowl and drizzle with olive oil

  • Season with garlic, smoked paprika, salt and pepper

  • Bake in the preheated oven for about 30 minutes

  • Enjoy them fresh!
